Stilton, Broccoli and Leek Cheese
Try this pimped up sides recipe for your Christmas feast!
Ingredients
- 1 x head of broccoli
- 3 x leeks
- 50g x plain flour
- 50g x butter
- 500ml x milk
- 75g x cheddar cheese
- 75g x stilton, crumbled
- salt & pepper

Preheat the oven to 180C fan/350F.
Cut the broccoli into florets and the leek into 3cm chunks, give them a quick wash in a colander.
Boil the broccoli and leeks for 3 mins in salted boiling water and then strain.
To make the cheese sauce make a roux by melting the butter in a saucepan on a gentle heat and then adding the flour. Cook for 3-4 mins and then slowly add in the milk, about 100ml at a time, stirring continuously. Before adding the milk each time wait for the roux to thicken.
Add a good pinch of salt and pepper followed by the Cheddar and Stilton, saving a little of each for the top.
Place the broccoli and leek in an oven proof dish followed by the cheese sauce then a little extra cheese. Bake in the oven for 30 mins until the cheese starts to turn golden.
