Smoked Salmon, Avocado, Cucumber and Cream Cheese Dressing
The perfect recipe for a festive starter. This is the classic for our Christmas eve starter, so simple, light and refreshing, which let's face it, it's much needed after all the excessive eating of goodies. It feels like its good for you when you eat it, will also make a great brunch dish. No cooking is involved in this recipe so is super speedy to make up.

Ingredients
- 100g x Smoked Salmon, Sliced
- 1 x Little Gem
- Handful of mixed Salad Leaves
- 50g x Cucumber
- 1 x Avocado
- 1/2 x Apple
- 60g x Cream Cheese
- 1 x Lemon
- 1/2 x Bunch Chives
- Seasoning
Print this recipe
First, make the cream cheese dressing. Place the cream cheese in a bowl with a good amount of black pepper and a pinch of salt. Zest and juice of 1 lemon and the chives chopped finely. Loosen with 1-2 tbsp of water and mix well.
Pull the leaves off a little gem, wash and place on a plate, add the smoked salmon. Use a peeler to make ribbons of fresh cucumber.
Add a few matchsticks of fresh apple and the peeled and sliced avocado.
Scatter over a few mixed leaves such as rocket.
Finish with the dressing and enjoy.
