LOCAL CHEF RYAN BROKENBROW'S RECIPE
Easter Biscuits
Makes 12 - 15 35 minutes
These delicious spiced biscuits make great gifts, try making them with the kids for a fun Easter activity!
ingredients
- 100g x Caster Sugar
- 1 x Egg
- ½ tsp x Baking Powder
- 80g x Currants
- 100g x Soft Butter
- 250g x Plain Flour
- 2 tbsp x Milk
- 1 x Egg, beaten
- 1 tbsp x Mixed Spice
- 50g x Mixed Peel
- Extra caster sugar to top

Heat oven 190C/170C Fan/Gas Mark 5.
Beat the sugar and butter together until fluffy.
Add the egg and mix for a few minutes.
Fold in the flour, baking powder and mixed spice.
Gently add the milk to form a dough.
Then fold in the currants
Tip out onto a lightly floured work surface and roll to about 5mm thick.
Cut out using a cutter (you can use any shape)
Bake on a lined baking tray for 18 minutes until they just start to turn golden.
Remove from oven, sprinkle with caster sugar and allow to cool on a rack.
