LOCAL CHEF RYAN BROKENBROW'S RECIPE

Apple & Raisin Slaw

Serves 4 - 6 10 minutes

A crunchy, fresh, apply and raisin slaw using red cabbage and fruity raisins for a lighter, more flavoursome slaw. Great with BBQed meats, salads, and will last for 3 days in the fridge, so it is a great recipe to prep beforehand so you can get ahead.

  • 50g x Raisins
  • 2 x Apples
  • 60g x Mayonnaise

  1. First of all, begin by washing all of your fruit and vegetables.

  2. Then, slice the red cabbage and red onion as thinly as you can.

(If you have a food processor with a slicer attachment you can use that to make the making of this slaw even quicker!)

  3. Next, it’s time to peel and grate the carrot.

  4. Core both of the apples, slice them in half then slice each half into thin slices.

  5. Now add all of your sliced fruit and vegetables to a large bowl and begin to add in the mayonnaise, wholegrain mustard, raisins, chopped parsley and seasoning.
