Lemonade
What better than a refreshing drink of homemade lemonade to go with a picnic? This recipe is a cheat and is for a lemon cordial that you mix with soda water to create lemonade.
Ingredients
- 6 x Large Lemons
- 130g x Caster Sugar
- 420ml x Water
- Soda Water and Ice Cubes to serve

Method
Peel the zest of the lemons using a peeler, add to a saucepan along with 420ml cold water and the sugar.
Gently bring to a simmer for 5 mins then turn off and let it rest for another 5 mins.
Juice the lemons and add the juice to the mix. Pass everything through a sieve to remove the lemon peel. Then pour into a bottle.
Makes 500ml of cordial Keep in the refrigerator until ready to use.
When ready to serve, mix to a ratio of 1/5 – 1 part lemon cordial to 5 parts soda water. You can add some more if you like a stronger lemon flavour, add some ice and an extra slice of lemon.
- Try adding a splash to a gin and tonic for a citrus Mediterranean vibe.
- You can use the cordial to make refreshing cocktails – try using limes instead to make a lime cordial.
- Will keep in the refrigerator for up to a month.
- Try mixing olive oil, mustard a splash of lemon cordial and seasoning to make a delicious salad dressing.
