Ingredients

  • 1 x Avocado (finely chopped)
  • 4 x Cherry Tomatoes (chopped)
  • 1/4 x Red Onion (finely chopped)
  • Small Piece of Red Chilli (finely chopped)
  • Small Bunch of Coriander (chopped)
  • 1/2 x Lime (juiced)
  • Sea Salt
  • Ground Black Pepper
  • 4 x Crumpets
  • 50g x Full-fat Philadelphia Cream Cheese
  • 100g x Sliced Smoked Salmon
  • 1 tsp x Chives (snipped)

Ingredients

  • 1 x Avocado (finely chopped)

  • 1/2 x Lime (juiced)

  • Ground Black Pepper
  • 4 x Crumpets
  • 50g x Full-fat Philadelphia Cream Cheese
  • 100g x Sliced Smoked Salmon
  • 1 tsp x Chives (snipped)

Method

  1. Preheat a grill until hot and toast the crumpets until golden. Alternatively, toast the crumpets in a toaster until golden.

  2. Mix together the avocado, tomatoes, red onion, chilli, coriander, lime juice and season.

  3. Place the crumpets on a serving plate. Divide the guacamole between 2 crumpets. Spread the cream cheese equally over the other 2 crumpets and top with the smoked salmon. Sprinkle with crushed black pepper and the chives. Serve straight away.
