Maple & Blueberry French Toast
French toast or Pain Perdu is the delicious sweet brunch treat or quick and easy evening dessert, great for using up stale bread. French toast is big in America and you can see why, the custard soaked bread is slightly like a crisp on the outside and bread and butter pudding like on the inside. You can also swap the blueberries for some bacon if you fancy!

Ingredients
- 4 x White Bread (thick sliced)
- 50g x Caster Sugar
- 75ml x Milk
- 2 x Eggs
- 1 tbsp x Flour
- 1 tbsp x Icing Sugar
- 25g x Butter
- 25ml x Maple Syrup
- Fresh Strawberries and Blueberries to serve

Method
Whisk the milk, caster sugar and eggs together.
Soak the bread in the mix for 5 mins turning half way through.
Mix the flour and icing sugar together then dust over the bread.
Gently heat the butter in a frying pan, you want a low head for this, when the butter has melted put the dusted side of the bread downwards in the pan and dust the top of the bread.
Fry for 5 mins then turn over and leave for another 5 mins.
Take out of the pan and add some blueberries for a few mins to warm through, add the maple syrup. This is make a warm blueberry and maple syrup, spoon over the sliced French toast and enjoy!
- Try adding banana and Nutella or a ball of vanilla ice cream for a quick and easy dessert.
- You can make a day in advance and leave it in the fridge to soak up all that custard mix.
