Pieminister
After spending time traveling around Australia in our early twenties, where we indulged in a daily ritual of eating pies, we returned home with a mission to give the humble British pie a fresh, exciting twist. Inspired by the pies we’d eaten down under, we were determined to elevate the British classic and make it something truly special.
In 2003, Pieminister was born. Armed with a small amount of equipment and a lot of determination, we set up shop in the vibrant Stokes Croft area of Bristol. Tristan took on the task of perfecting the pies, while Jon focused on running the shop. The beginning was humble—on our first day, we only sold five pies (not exactly the launch we had envisioned!). But word spread quickly, and within two weeks, there was a queue out the door. Our small pie shop had captured the attention of the local community.
Our success didn’t stop there. We expanded our reach, securing a stall at London’s iconic Borough Market and eventually landing a pitch at the legendary Glastonbury Festival—a dream come true for both of us. As demand for our pies grew, so did our business. What started as a small operation in Bristol has now expanded to a team of around 300 dedicated people, all working together to create the best pies in the business.
Today, we continue to make every single one of our pies in our kitchens in Bristol, staying true to our roots. We’re still as passionate about pies as we were on day one, and, yes, we still eat them every day. Pieminister has grown far beyond our initial vision, but we’ve never lost sight of what made us start this journey: our love for great, honest food, made with care and shared with others.
